The kids were a little skeptical at first, but they all liked it. Their least favorite part was the cabbage, but they each enjoyed the beets - much to my surprise.
Zeb thought it was wonderful. We're pretty sure the flavor profile was extremely familiar to him. He ate two bowls full. His, though, was blended since he still doesn't really know how to chew properly.

Here is the recipe that I used. I didn't use the beef broth, just water. I think it may need maybe half broth, half water just for added flavor, but all broth would be way to high in sodium for my taste.
It was very simple to prepare. I will definitely be making it again.
Mike even gave me a high five for a well prepared, delicious Russian dinner.
Aren't you proud of me Marina?

Can you post how to make it? I would like to try and perfect it before we get Carlene home. And love that cute little face covered in Borscht.

Awesome! We love it too, although Dariya breaks out in a rash whenever she eats too much of it. I guess the red dye gets her.
I look forward to trying this dish, when you prepare it of course! Since your recipe uses fresh beets, there would be no red dye. Sprouts has a low-sodium broth with 1/4 the sodium of regular broth. So fun that Zeb enjoyed a "familiar" dinner!
I printed this off - we have been looking for an easy borscht recipe. Thanks! It's been a joy to follow your journey. I'm a lurker and have never commented. :)
Blessings,
Allison
